It's what we love about it, but also what has consistently made it one of the worst offenders in how cocktail culture contributes to Climate Change. This is the critical decade to fight this fight and the world needs Tiki on board. Can we redesign Tiki to "be better" and "get greener", while still keeping its essence?
Bio --
Claire Sprouse has bartended, managed, and consulted at some of the country's most well-known and awarded cocktail institutions, from Houston to San Francisco and now New York City. Over the last decade, she has worked vigorously to tackle issues of sustainability within the industry. As a leader in this conversation, her past work with Tin Roof Drink Community was honored with the industry’s first ever “Sustainable Spirit” award and the 2017 “Golden Spirit” educator award, both presented by Tales of the Cocktail. Most recently, Sprouse opened her first bar -- Hunky Dory in Crown Heights, Brooklyn. In its first year, the bar & restaurant landed many accolades, including being named on several "Best of New York" annual lists. In 2020, Sprouse launched OUTLOOK GOOD - a consulting and education company focused on her goal to create a culture of shared information and inclusivity centered around greener bar practices.

In the process, Alex has trained hundreds of bartenders, designed dozens of bars, and along the way, has fallen deeply in love with the process of turning the idea of a bar into a reality. Alex focuses primarily on company operations, planning, and logistics, process improvement, design, and systems. Passionate about education, he is a regular speaker at industry conferences and specialized events, a member of the Tales of the Cocktail Education Committee, as well as a contributor to various publications as a writer and expert commentator. Alex is the co-author of Death & Co: Modern Classic Cocktails, as well as the James Beard and Spirited Award-winning book, Cocktail Codex: Origins, Fundamentals, Formulas. Alex lives in Portland, Maine with his husband, Andrew.
