Topic: Behind the scenes at Flor de Caña. Brief: Mauricio Solorzano (Flor de Caña Global Brand Ambassador) talks about 4 key components of the Nicaraguense family company. Quick history facts: This story began 1875 when Alfredo Francisco Pellas Canessa, a young adventurer from Genoa, Italy, risked everything by leaving behind his family and the comforts of the old continent to travel to the exotic country of Nicaragua. Initially, he invested in a shorter and safer steam boat route through Nicaragua to transport passengers and goods from the East Coast of the US to the West Coast during the height of the California Gold Rush. The route was a huge success, but when news broke about the construction of the Panama Canal and the U.S. coast-to-coast railroad, Alfredo Francisco knew it was time to set out on a new adventure. In 1890, he found the perfect setting for the Flor de Caña distillery at the base of the San Cristóbal volcano, the tallest and most active volcano in Nicaragua. The fertility of its surrounding lands, the enriched water and the hot volcanic climate proved to be instrumental in forging the rum’s unique and distinguished character. Through its 130-year history, the brand, the company and the family have lived through a plane crash, a civil war, nationalizations, hyperinflation, fires, hurricanes, earthquakes and volcanic eruptions. Throughout all this, and against all odds, the company has also been able to remain a family business for five generations:

In March 1890, the fledgling city of Brisbane was in mourning. Unprecedented flood waters had inundated the riverside suburbs to a depth of more than three meters, the electricity and telegraph lines were destroyed, hundreds of homes were underwater, and multiple residents has drowned. The Milton Rum Distillery, then one of Queensland’s largest rum producers, never reopened, and no rum was produced in Milton for over a hundred years.
Fast forward a few generations and Milton Rum has awakened, fueled by fresh passion and a vibrant desire to reimagine rum. Our urban distillery sits only a few blocks from where the original Milton Rum Distillery once stood and we are honoured to have inherited a rich tradition of innovation and quality rum production. Our crest, the Eastern Koel bird, is a shout-out to our city’s colourful history. The Eastern Koel, also known as the ‘storm bird,’ was said to fly ahead of rising flood waters, warning residents of the danger to come. We would like to think that our Storm Bird flies above us today.

Privately, she enjoys craft beer and is always on the hunt for a Cabernet Franc. Rene van Hoven:
Rene is an F&B teacher, international wine & spirits judge, and a vintage rum collector known as Rene’s Rarities. He has contributed articles to magazines such as More Than Drinks, Whisky Passion, and Rum Porter. Rene also published a book entitled “Journey To Above The Clouds,” which documents his study of Zacapa Rum and their Guatemala facilities.
He is a recurring guest at various spirits festivals and competitions, where he gives rum masterclasses and offers visitors a chance to taste rarities from his private vintage collection. Some of the most notable worldwide events include Miami Rum Renaissance, Michelangelo South Africa, and the German Rum Festival in Berlin.

Female empowerment and gender equality continue to be a hot topic worldwide. One of the last few macho industries that are finally catching up is the rum world.
Female master blenders are on the rise, so it’s safe to assume that rum production is no longer a boys-only playground. That’s where our book comes in: we’re here to tell the stories of the best female master blenders in the rum industry and celebrate their achievements.
Introducing Joy Spence as the first female Master Blender in 1997 revolutionized the rum world and the entire spirits scene. Ironically, research tells us that women are better equipped to handle this job as they are naturally better tasters than men.
Therefore, it’s about time to take them more seriously. This book aims to give them the attention they deserve.
Each chapter will focus on a different master blender and the brand they represent. The reader will learn about their upbringing, education, and journey towards the top of the ladder in the rum-making process. We will also highlight their struggles and perseverance in reaching their goals, as it can’t be easy to be the only woman in a male-dominated world.
We want this book to be visually engaging, so we hope to use promotional pictures and photos from private archives (childhood, first steps, behind the scenes). The aim is to give the readers a feeling as if they know the ladies personally.

The Prohibition and post-Prohibition years were rum’s comeback era. After being eclipsed by whiskey, rum bounced back thanks to Prohibition and the liquors shortages of World War II. How did this happen? What were people drinking? How did rum then differ from rum today? And how did it evolve over those four decades? Wayne Curtis, author of “And a Bottle of Rum: A History of the New World in 10 Cocktails,” will discuss rum’s 20th century revival, including the role of exotic drinks in bringing the most flavorful rums back to the public’s attention.

Guatemalan lands have characteristics that make them unique, such as vertisol soil, which is only found in 2% of the earth’s surface.
The productive area of the Protected Denomination of Origin of Rum of Guatemala is located on the South Coast of Guatemala, in the departments of Retalhuleu and Suchitepéquez, within the heart of the sugarcane-sugar zone.
The Rum of Guatemala is produced only using “virgin sugar cane honey” as raw material. Living up to its name, this syrup-like liquid is delicious, sweet and has a pleasant flavor.
Virgin sugar cane honey is the product of pressing ripe cane. The juice obtained from the milling is heated, clarified and filtered to eliminate the solid cane remains that may have remained in suspension. Finally, the clean juice is subjected to evaporation to remove excess water and center the sugars.
Only 3% of the world’s rums are made with pure sugar cane juice.

“The Future of Tiki” is going to begin with a summary of what our nonprofit B4Change is doing to reshape our industry. Then I will go into contextualizing the cultures that Tiki “borrows” from, the problems they face, and the problematic themes in the genre. Then I will talk about how we can learn to be culturally sensitive, how to build an appropriate tropical bar, and a responsible bar program.
Sam Miller has been in the hospitality industry for 15 years. He has worked around the country in Park City, Jackson Hole, Denver, Honolulu, and San Francisco where he was the Bar Manager at The Zombie Village, and GM of Pagan Idol. Before his time in SF he was the bar manager for Iron Chef Morimoto in Honolulu, HI. He is a co-founder of the social justice organization B4Change (Bartenders For Change) and is focused on reshaping the industry to be more inclusive and equitable for all marginalized people. Sam is a bartender, an activist, a certified sommelier, a musician and an outdoor enthusiast. His passion is sharing food and beverage with people from around the world.
