Topic: Rum – African enslavement, Taino genocide, and colonization
Guest Speaker: Kelvin Uffre – Spirits Specialist
What You’ll Learn:
I’ve worked in the beverage industry for about 17 years, starting in Dive bars to spots like the James beard award winning Maison Premiere and Olmsted. Currently I’m the Spirits Specialist for Winebow in NY, NJ and CT. I oversee a sales team of about 87 people. My role is mainly to educate, critically analyze new potential brands and create sales strategy.
I’m a Dominican immigrant how came here at age 5 and became a citizen at age 11. Because of my experience being brown in majority white industry my story is from the perspective of constant subjugation, subordination and having to push twice as hard to make it where I am today.
I recently wrote a historical feature on the white supremacy of the spirits industry which interrogated how white supremacy controls what stories are told and how. It draws a historical thread from producer to cocktail bar.
When I teach about spirits I always try to teach from a cultural framework as much as possible, it’s my belief that those that suffered the oppression that gave birth to the spirits in the first place should be the authors and storytellers of those experiences.
We cannot talk about rum with out talking about African enslavement, Taino genocide and colonization. Experiencing spirits outside of the very white Sommelier framework is important to me as it doesn’t suit most spirits.

A passion for distilled spirits and the desire to bring commerce back home ultimately tipped the scales in favor of taking on the hurdles and developing Puerto Rico’s first Craft Distilling concept.
By using non-traditional distilling and aging methods, paired with our love and enthusiasm for craft products La Destileria breaks barriers set forth by PR’s long standing, distilling rich history and brings forth two new interpretations of Puerto Rican Rum. This is just the beginning….

Rums of the 1920s, ’30s, ’40s, and ‘50s
The Prohibition and post-Prohibition years were rum’s comeback era. After being eclipsed by whiskey, rum bounced back thanks to Prohibition and the liquors shortages of World War II. How did this happen? What were people drinking? How did rum then differ from rum today? And how did it evolve over those four decades? Wayne Curtis, author of “And a Bottle of Rum: A History of the New World in 10 Cocktails,” will discuss rum’s 20th century revival, including the role of exotic drinks in bringing the most flavorful rums back to the public’s attention.

Copalli Rum is a sustainable rum in the heart of the Belizean Rainforest. Built in 2017 and surrounded by 22,000 acres of rainforest conservancy, the farm is the first certified-organic farm in Belize. Copalli’s core founding principles was to make great tasting rum with all-natural ingredients, while honoring the land and the community.
-
The distillery is designed to be zero impact. The stills are powered by sustainable, regenerative biomass and the process supports full-circle conversion of waste from production into agricultural inputs. Rainforest water is captured in holding tanks for blending. There is no toxic waste run-off, typical to other rum distilling practices.
-
We grow our organic non-GMO, heirloom sugar cane on-site at Copal Tree Farms and oversee the production of the rum from start to finish.
-
As the largest employer in Southern Belize, Copalli is proud to give back by supporting local community activities and providing educational grants.
