Rhum Depaz are a rum brand and distillery from the French speaking island of Martinique. As a result most (but not all) of their rhums follow the AOC (Appellation d’Origine Controlee) Martinique.

Copalli Rum is a sustainable rum in the heart of the Belizean Rainforest. Built in 2017 and surrounded by 22,000 acres of rainforest conservancy, the farm is the first certified-organic farm in Belize. Copalli’s core founding principles was to make great tasting rum with all-natural ingredients, while honoring the land and the community.

The distillery is designed to be zero impact. The stills are powered by sustainable, regenerative biomass and the process supports full-circle conversion of waste from production into agricultural inputs. Rainforest water is captured in holding tanks for blending. There is no toxic waste run-off, typical to other rum distilling practices.

We grow our organic non-GMO, heirloom sugar cane on-site at Copal Tree Farms and oversee the production of the rum from start to finish.

Growing up in Puerto Rico surrounded by his family’s business, Roberto Serrallés could scarcely avoid the rum world. But after 20 years in Puerto Rico, he moved to the United States to pursue a PhD from the University of Oregon with the hope of one day becoming a professor. He didn’t stay away from Puerto Rico for long. When his father called seeking advice on an environmental issue the company was facing, Serrallés was intrigued, and he spent the next four years consulting on a wastewater energy project for Destillería Serrallés. Claire Sprouse has bartended, managed, and consulted at some of the country’s most well-known and awarded cocktail institutions, from Houston to San Francisco and now New York City. Over the last decade, she has worked vigorously to tackle issues of sustainability within the industry. As a leader in this conversation, her past work with Tin Roof Drink Community was honored with the industry’s first ever “Sustainable Spirit” award and the 2017 “Golden Spirit” educator award, both presented by Tales of the Cocktail. Most recently, Sprouse opened her first bar — Hunky Dory in Crown Heights, Brooklyn. In its first year, the bar & restaurant landed many accolades, including being named on several “Best of New York” annual lists. In 2020, Sprouse launched OUTLOOK GOOD – a consulting and education company focused on her goal to create a culture of shared information and inclusivity centered around greener bar practices.
