Guest Speaker: Bailey Pryor – Founder & C.E.O
What You’ll Learn: The Real McCoy 100 Proof Limited Edition is the FIRST alcohol brand in the United States to voluntarily list both Ingredients and Serving Facts on the bottle label. This information is verified by an independent 3rd party testing agency named BDAS in Lexington, KY. These labels are government approved by the TTB in the United States, signifying a milestone step toward real transparency in the beverage alcohol industry. “We think 3rd party verified transparency is key to building consumer confidence in beverage alcohol, especially in the premium rum sector. Hopefully other brands will join The Real McCoy rum in voluntarily disclosing their 3rd party verified Ingredients and Serving Facts. Consumer have a right to know whats in their favorite beverages, just like they do with their favorite foods.” – Bailey Pryor, Founder & CEO, The Real McCoy Rum.
About Bailey Pryor:
Inspired by real-life Prohibition-era rum-runner Bill McCoy, filmmaker Bailey Pryor launched The Real McCoy rum in 2013—the same year he won five Emmy Awards for the documentary he wrote and directed about Bill McCoy. During the making of the movie, Pryor decided to create a rum like the one McCoy smuggled from the Caribbean to New York in the 1920s. While many other bootleggers diluted their alcohol with turpentine or prune juice, McCoy’s rums were pure and uncut, earning them the moniker “The Real McCoy.”

Topic: All Hands on Deck – Why Tiki Must Get Green
Channel: Tiki by the Sea
Host: Peter Nevenglosky – Co-Founder Tiki by the Sea
What You’ll Learn: Tiki Tuesday Talks series is a weekly session at 3 ET / 12 PT / 9 GMT with some of the best in the business – education, cocktails and some fun.
Looking back through history, the rise of Tiki lined up perfectly with the rise of plastic and the cheapening of global commodities. If you’re curious how far the movement has come since then, look no further than the glass in front of you today — the quintessential Tiki drink is adorned with tropical flowers, relies on globally sourced products, and comes with a hefty dose of plastic knick-knacks. It’s what we love about it, but also what has consistently made it one of the worst offenders in how cocktail culture contributes to Climate Change. This is the critical decade to fight this fight and the world needs Tiki on board. Can we redesign Tiki to “be better” and “get greener”, while still keeping its essence?
Bio —
Claire Sprouse has bartended, managed, and consulted at some of the country’s most well-known and awarded cocktail institutions, from Houston to San Francisco and now New York City. Over the last decade, she has worked vigorously to tackle issues of sustainability within the industry. As a leader in this conversation, her past work with Tin Roof Drink Community was honored with the industry’s first ever “Sustainable Spirit” award and the 2017 “Golden Spirit” educator award, both presented by Tales of the Cocktail. Most recently, Sprouse opened her first bar — Hunky Dory in Crown Heights, Brooklyn. In its first year, the bar & restaurant landed many accolades, including being named on several “Best of New York” annual lists. In 2020, Sprouse launched OUTLOOK GOOD – a consulting and education company focused on her goal to create a culture of shared information and inclusivity centered around greener bar practices.
About Tiki by the Sea: Tiki by the Sea is a trade-focused educational and immersive cultural experience into the culture, spirits, and drinks of the Tiki era.
