What You’ll Learn:
We will explore what escapism looks like in the context of restaurants and bars by beginning with a brief history of the themed bar/restaurant dating back to the late 19th Century and early 20th Century leading up to the 1930s. Then we are going to get into the faux-Polynesian restaurant theme (a.k.a the tiki bar) and its explosion relating to the demand for escapism in the mid-twentieth century. Finally, we will discuss what defines a tiki bar in the 21st century by looking at a handful of bars today (including a sneak-peek into Paradise Lost) while we consider what escapism really means for the modern tropical bar.

The stills are powered by sustainable, regenerative biomass and the process supports full-circle conversion of waste from production into agricultural inputs. Quick history facts: This story began 1875 when Alfredo Francisco Pellas Canessa, a young adventurer from Genoa, Italy, risked everything by leaving behind his family and the comforts of the old continent to travel to the exotic country of Nicaragua. Initially, he invested in a shorter and safer steam boat route through Nicaragua to transport passengers and goods from the East Coast of the US to the West Coast during the height of the California Gold Rush. The route was a huge success, but when news broke about the construction of the Panama Canal and the U.S. coast-to-coast railroad, Alfredo Francisco knew it was time to set out on a new adventure. In 1890, he found the perfect setting for the Flor de Caña distillery at the base of the San Cristóbal volcano, the tallest and most active volcano in Nicaragua. The fertility of its surrounding lands, the enriched water and the hot volcanic climate proved to be instrumental in forging the rum’s unique and distinguished character. As a leader in this conversation, her past work with Tin Roof Drink Community was honored with the industry’s first ever “Sustainable Spirit” award and the 2017 “Golden Spirit” educator award, both presented by Tales of the Cocktail. Most recently, Sprouse opened her first bar — Hunky Dory in Crown Heights, Brooklyn. In its first year, the bar & restaurant landed many accolades, including being named on several “Best of New York” annual lists.
